Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside a rimmed baking sheet and set aside.
  2. Pat the chicken thighs completely dry with paper towels. This is crucial for crispy skin.
  3. In a small bowl, combine softened butter, minced garlic, grated Parmesan, Italian seasoning, smoked paprika, salt, and black pepper. Mix until evenly incorporated.
  4. Using your fingers, gently loosen the skin of each chicken thigh from the meat, creating a pocket without tearing the skin. Divide half of the garlic Parmesan butter mixture evenly under the skin of each thigh. Rub the remaining butter mixture all over the outside of the skin.
