Instructions

  1. Prepare the Seeds: After carving your pumpkin, separate the seeds from the stringy pulp. Place them in a colander and rinse under cool running water, using your fingers to break apart any clumps. Shake off excess water.
  2. Dry the Seeds: Spread the rinsed seeds on a clean kitchen towel or multiple layers of paper towels. Pat them gently until they are mostly dry. They should feel damp to the touch but not soaking wet. Let them sit for 5 minutes if they still feel too wet.
  3. Mix the Spice Blend: In a small bowl, combine the smoked paprika, garlic powder, onion powder, cayenne, salt, black pepper, and cumin. Stir with a fork to break up any clumps.
  4. Season the Seeds: Place the dried pumpkin seeds in a medium mixing bowl. Drizzle with the olive oil and toss to coat evenly. Sprinkle the spice mixture over the top and toss again until every seed is coated.
