  • 1 (10 oz) can red enchilada sauce
  • 1 (4 oz) can diced green chiles
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (10 oz) can diced tomatoes with green chiles (like Rotel)
  • 1 (8 oz) block cream cheese, softened
  • 2 cups low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • Shredded Mexican blend cheese (for topping)
  • Sour cream (for topping)
  • Fresh cilantro, chopped (for topping)
  • Crushed tortilla chips (for topping)
  • Diced avocado (for topping)
  • Lime wedges (for serving)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker. Season lightly with salt and pepper.
  2. Pour the enchilada sauce, diced tomatoes with green chiles (undrained), and chicken broth over the chicken. Do not stir.
  3. Sprinkle the garlic powder, onion powder, cumin, and chili powder over the top. Do not stir.
  4. Add the drained black beans, drained corn, and diced green chiles. Spread them evenly over the top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Remove the chicken breasts to a cutting board and shred with two forks.
  7. Cut the softened cream cheese into small cubes and add to the slow cooker. Stir until fully melted and incorporated.
  8. Return the shredded chicken to the pot and stir to combine. Taste and adjust seasoning.
  9. If the soup is too thick, add an extra 1/2 cup of chicken broth or milk and stir.
  10. Ladle into bowls and top with shredded cheese, sour cream, crushed tortilla chips, cilantro, and avocado. Serve with lime wedges.

For a dairy-free version, use dairy-free cream cheese and skip the shredded cheese topping. For a gluten-free option, ensure your enchilada sauce and broth are certified gluten-free. The soup thickens as it sits; add extra broth when reheating. Do not add cream cheese at the beginning of cooking to avoid curdling.
