  • ¾ cup pure maple syrup (240ml)
  • ½ cup packed brown sugar (100g)
  • ¼ cup bourbon (60ml)
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two opposite sides. Lightly grease the parchment with butter or cooking spray.
  2. Make the shortbread crust: In a medium bowl, whisk together flour, sugar, and salt. Add cold, cubed butter. Use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse sand with some pea-sized butter pieces remaining.
  3. Press the crust mixture into the prepared pan firmly and evenly (about ¼-inch thick). Prick the crust all over with a fork.
  4. Bake the crust for 15-18 minutes, until edges are just starting to turn golden. Remove from oven and set aside. Leave the oven on.
