  • ⅓ cup honey (or maple syrup for vegan)
  • ½ cup mini chocolate chips (e.g., Enjoy Life brand)
  • 2 tablespoons ground flaxseed (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt (if peanut butter is unsalted)

Instructions

  1. In a large mixing bowl, combine 1 cup creamy peanut butter, ⅓ cup honey (or maple syrup), and 1 teaspoon vanilla extract. Stir until smooth and well combined.
  2. Add 1 ½ cups rolled oats, ½ cup mini chocolate chips, 2 tablespoons ground flaxseed (if using), and a pinch of salt. Stir until everything is evenly mixed and the mixture holds together when pressed.
  3. Check consistency: if too crumbly, add another tablespoon of honey or peanut butter; if too sticky, add a tablespoon of oats.
  4. Optional: refrigerate the mixture for 10-15 minutes to make rolling easier.
  5. Using a cookie scoop or tablespoon, portion the mixture and roll into 1-inch balls. Place on a parchment-lined baking sheet.
  6. Refrigerate for at least 30 minutes (1 hour is ideal) to firm up.
