Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ½ cup packed brown sugar
  • ½ cup molasses (not blackstrap)
  • 1 large egg, room temperature
  • ½ cup milk (whole or 2%)
  • 8 ounces cream cheese, softened (full-fat)
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 4 ounces cream cheese, softened (full-fat)
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar, sifted if lumpy
  • ½ teaspoon vanilla extract
  • 1–2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides.
  2. Make the gingerbread base: In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. In a large bowl, whisk melted butter and brown sugar until smooth. Add molasses and whisk until thick and glossy. Add egg and milk, whisk until combined. Pour dry ingredients into wet and stir with a rubber spatula until just combined (a few lumps are fine).
  3. Spread the gingerbread batter evenly into the prepared pan. Batter will be thick.
  4. Make the cheesecake layer: In a clean bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 1 minute. Add sugar and beat until combined. Add egg yolk and vanilla, beat just until incorporated. Fold in 1 tablespoon flour with a spatula.
  5. Drop spoonfuls of cheesecake mixture over the gingerbread batter. Gently swirl with a knife or offset spatula to create ribbons—do not fully mix.
  6. Bake for 25-28 minutes. Edges should be set, center should jiggle slightly. A toothpick inserted into the center should come out with moist crumbs, not wet batter.
  7. Cool completely: Let cool in pan on a rack for 30 minutes at room temperature, then refrigerate for at least 2 hours (or overnight).
  8. Make the frosting: In a medium bowl, beat softened cream cheese and butter until smooth. Add powdered sugar and vanilla, beat on low until combined. Add milk 1 tablespoon at a time until drizzling consistency.
  9. Frost and slice: Use parchment overhang to lift bars out of pan. Drizzle frosting over top in a zigzag pattern. Let set for 10 minutes, then slice into squares. Wipe knife between cuts for clean slices.

Notes

Room temperature ingredients are crucial for best texture. Do not overmix cheesecake layer to avoid cracks. Chill bars completely before slicing for clean cuts. For gluten-free, use 1:1 gluten-free flour blend. For vegan, use plant-based butter and cream cheese, flax egg, and omit egg yolk. Store in airtight container in refrigerator up to 5 days. Freeze up to 3 months.
