  • 8 oz prosciutto, thinly sliced
  • 8 oz sharp cheddar, cubed
  • 8 oz gouda, sliced or cubed (smoked recommended)
  • 4 oz blue cheese crumbles (optional)
  • 1 cup mixed olives (Castelvetrano and Kalamata)
  • 1/2 cup cornichons or pickles
  • 1/2 cup honey
  • 1/2 cup whole grain mustard
  • 1 bag pita chips
  • 1 bag pretzel crisps
  • 1 bag crackers (water crackers and buttery rounds)
  • 1 cup red grapes, washed and in small clusters
  • 1/2 cup dried apricots
  • 1/2 cup roasted almonds (lightly salted)
  • 1 apple, sliced (tossed in lemon juice to prevent browning)
  • 46 toothpicks
  • Small pieces of yellow cheddar and pepperoni (for football picks)
  • Optional: mini pretzel sticks (for goal posts)

Instructions

  1. Set up your base: Place your board or baking sheet on a flat surface. If using a baking sheet, line it with parchment paper for easy cleanup.
  2. Place your bowls: Arrange small bowls for the olives, honey, and mustard in a triangle pattern in the corners or center of the board to create anchors.
  3. Add the cheeses: Cube the cheddar into 1-inch pieces. Slice the gouda into thin triangles. Place the blue cheese crumbles in a small pile. Arrange these in different spots on the board.
  4. Layer the meats: Fold the salami slices into quarters and arrange them in a small pile. Roll the prosciutto into loose ribbons. Lay the pepperoni in a fan pattern. Space these out so each cheese has a meat nearby.
  5. Add the crunch: Pour the pita chips, pretzel crisps, and crackers into the remaining empty spaces, creating little pockets around the board.
  6. Fill in with fresh and sweet: Tuck the grape clusters into gaps. Scatter the dried apricots and almonds around. Add the apple slices last.
  7. Make the Football Picks: Cut a small triangle of yellow cheddar to look like a football. Spear it with a toothpick. Cut a small circle of pepperoni for the helmet and spear that on top. Stick the toothpick into a small block of cheese or a cracker to stand upright. Make 4-6 of these. Optionally, use mini pretzel sticks to create goal posts by sticking two into a cheese cube and laying a third across the top.
  8. Final touches: Drizzle a little honey over the gouda. Add a spoon to the mustard bowl. Step back and look at the board—if you see a big empty spot, add a few more crackers or grapes.

Notes

Keep crackers and chips separate from wet ingredients to avoid sogginess. Let cheese sit at room temperature for 20 minutes before assembling for best flavor. For transport, assemble on a rimmed baking sheet, cover tightly with plastic wrap and foil, and add wet ingredients on site. On hot days, place a small ice pack under the board or keep in the shade.
