  • 3/4 cup all-purpose flour (95g), spooned and leveled
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/3 cup semi-sweet chocolate chips (60g) or roughly chopped chocolate
  • Flaky sea salt (optional, for finishing)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a microwave-safe bowl in 15-second bursts until just melted. Let cool for 1-2 minutes.
  3. Add granulated sugar and brown sugar to the melted butter. Whisk vigorously for 30 seconds to 1 minute until thick and paste-like.
  4. Whisk in the egg yolk and vanilla extract until smooth, pale, and slightly thickened.
  5. Switch to a rubber spatula. Sprinkle flour, baking soda, and salt over the wet mixture. Fold gently until just combined (a few streaks of flour are okay).
  6. Fold in the chocolate chips until evenly distributed. Dough will be soft and slightly sticky.
  7. For best results, cover and chill the dough for 30 minutes (optional but recommended).
  8. Using a cookie scoop or two spoons, portion dough into 6-8 equal balls. Place on prepared baking sheet, spacing 2 inches apart.
  9. Bake for 9-11 minutes. Edges should be golden and set, centers still soft and puffy.
  10. Remove from oven. If using, sprinkle flaky sea salt on top. Let cookies rest on the hot baking sheet for 5 minutes, then transfer to a cooling rack.
