  • 1/2 cup (110g) packed brown sugar
  • 2 large eggs, room temperature

  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt (for the dough)
  • 1 1/2 cups (270g) semi-sweet chocolate chips
  • Flaky sea salt, for sprinkling on top

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt the unsalted butter. Stir frequently as it foams and then begins to brown, about 5-7 minutes. Remove from heat immediately to avoid burning. Pour the browned butter into a heatproof bowl and let it cool for 10 minutes.
  2. Mix sugars and eggs: In a large bowl, whisk together granulated sugar, brown sugar, and eggs until smooth and slightly fluffy, about 2 minutes. Stir in the vanilla extract.
  3. Combine dry ingredients: In a separate bowl, sift together all-purpose flour, baking soda, and fine sea salt.
  4. Bring it all together: Slowly pour the cooled browned butter into the sugar-egg mixture, whisking continuously to combine. Gradually fold in the dry ingredients until just incorporated. Do not overmix.
  5. Fold in chocolate chips: Use a spatula to gently fold in the semi-sweet chocolate chips evenly.
  6. Chill the dough: Cover the dough and refrigerate for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Scoop and bake: Portion dough onto baking sheets about 2 inches apart. Bake for 10-12 minutes, until edges are golden but centers look slightly soft.
  9. Finish with flaky sea salt: Immediately after removing from oven, sprinkle each cookie lightly with flaky sea salt. Let cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes

Watch the butter closely while browning to avoid burning. Chill dough for at least 30 minutes to improve texture and flavor. Use light-colored baking sheets and rotate trays halfway through baking for even color. Sprinkle flaky sea salt immediately after baking for best texture and flavor.
