Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, browned and cooled slightly
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups all-purpose flour (or almond flour for gluten-free)
  • 1 1/2 cups old-fashioned rolled oats (not instant)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 cups fresh peaches, peeled and sliced (about 45 medium peaches)
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt 1 cup (2 sticks) of unsalted butter. Stir constantly as it foams and then turns golden brown with a nutty aroma—about 5-7 minutes. Remove from heat and let cool slightly.
  2. Prepare the crust and streusel base: In a large bowl, whisk together 2 1/2 cups all-purpose flour, 1 1/2 cups rolled oats, 1 teaspoon baking powder, and 1/2 teaspoon salt. In another bowl, mix the browned butter with 1 cup light brown sugar and 1/2 cup granulated sugar until combined.
  3. Add eggs and vanilla: Beat in 2 large eggs and 1 teaspoon vanilla extract into the butter-sugar mixture until smooth. Gently fold the wet ingredients into the dry flour and oat mixture until crumbly but holds together when pressed. If it feels too dry, add a splash of milk (1-2 tablespoons). Divide this mixture between crust and topping.
  4. Make the peach filling: Toss 4 cups sliced peaches with 1/3 cup granulated sugar, 2 tablespoons cornstarch, 1 teaspoon lemon juice, and 1/2 teaspoon cinnamon. Set aside to let flavors meld.
  5. Assemble the bars: Press about two-thirds of the crumble mixture firmly into the bottom of a greased 9×13-inch baking pan to form the crust. Spread the peach filling evenly over the crust. Sprinkle the remaining crumble mixture evenly on top, gently pressing it down.
  6. Bake: Preheat oven to 350°F (175°C). Bake bars for 40-45 minutes or until the top is golden brown and peach filling is bubbling. Tent loosely with foil halfway through if topping browns too quickly.
  7. Cool and slice: Let bars cool completely on a wire rack before cutting into squares to allow filling to set.

Notes

Brown the butter carefully to avoid burning; stir constantly and remove from heat once nutty aroma appears. Drain excess liquid from peaches if very juicy to prevent soggy bars. Let bars cool completely before slicing for best texture. For dairy-free, use vegan butter and flax eggs. Adding 1/4 cup chopped pecans or walnuts to streusel adds crunch.
