  • 3/4 cup (180 ml) whole milk (or almond/oat milk for dairy-free)
  • 2 large eggs, room temperature
  • 1/4 cup (56 grams) unsalted butter, melted
  • 1/4 cup (60 grams) sour cream (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • A pinch of black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together 2 large eggs, 3/4 cup milk, 1/4 cup melted butter, and 1/4 cup sour cream if using until smooth.
  3. Gradually stir in the 8.5 oz cornbread mix, 1/2 teaspoon salt, 1/2 teaspoon ground cumin, and a pinch of black pepper. Mix gently until just combined; do not overmix.
  4. Fold in 1 cup shredded sharp cheddar cheese and 1 cup chopped Hatch green chiles evenly.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Let the casserole rest for about 10 minutes before slicing and serving.

Notes

Do not overmix the batter to keep the cornbread light and fluffy. Use freshly shredded cheese for better melting. Let the casserole rest 10 minutes before serving to set properly. For a crispier top, broil for the last 2 minutes but watch closely to avoid burning. Fresh roasted Hatch chiles add the best smoky flavor. Sour cream is optional but recommended for extra moisture.
