  • ¼ teaspoon salt
  • ½ cup (113 g) unsalted butter, melted and slightly cooled
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • Cinnamon Sugar Coating:
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Pour 1 cup (240 ml) of apple cider into a small saucepan. Bring to a gentle boil over medium heat, then reduce to a simmer. Let it cook until it reduces by about half, approximately 15 minutes. Set aside to cool.
  2. Preheat oven to 350°F (175°C). Grease a 12-cup muffin pan or line with paper liners.
  3. In a large bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, ½ teaspoon baking soda, 2 teaspoons ground cinnamon, ¼ teaspoon ground nutmeg (if using), and ¼ teaspoon salt.
  4. In a medium bowl, whisk melted butter with ¾ cup granulated sugar until combined. Add eggs one at a time, whisking after each addition. Stir in vanilla extract and cooled reduced apple cider.
  5. Pour wet ingredients into dry ingredients. Gently fold with a spatula until just combined; do not overmix.
  6. Divide batter evenly among muffin cups, filling about ¾ full.
  7. Bake for 18-22 minutes until a toothpick inserted comes out clean or with a few moist crumbs.
  8. While baking, mix ½ cup granulated sugar with 2 teaspoons ground cinnamon in a shallow bowl.
  9. Let muffins cool in the pan for 5 minutes. Brush each muffin with melted butter and roll in cinnamon sugar mixture until fully coated.
  10. Place muffins on a cooling rack to set.
