Cozy Baked Apple Cider Donuts with Maple Glaze

  • 1 3/4 cups (220 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 4 tablespoons (56 g) unsalted butter, melted
  • 1/4 cup (60 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1/2 cup (120 ml) buttermilk, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (120 g) powdered sugar, sifted
  • 2 tablespoons pure maple syrup
  • 1–2 tablespoons milk
  • 1/2 teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan thoroughly with butter or non-stick baking spray.
  2. Reduce the apple cider: Pour 1 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about 1/4 cup, about 10-12 minutes. Remove from heat and let cool.
  3. Mix dry ingredients: In a medium bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. Mix wet ingredients: In a large bowl, whisk together granulated sugar and brown sugar. Add eggs and whisk until smooth and slightly pale, about 1 minute. Add melted butter, oil, buttermilk, vanilla extract, and reduced apple cider. Whisk until well combined.
  5. Combine wet and dry: Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  6. Fill the donut pan: Transfer batter to a piping bag or ziploc bag with corner snipped. Pipe batter into each donut cavity, filling about 2/3 to 3/4 full.
  7. Bake for 10-12 minutes, or until golden brown and a toothpick inserted into thickest part comes out clean. Rotate pan halfway through.
  8. Cool: Let donuts cool in pan for 5 minutes, then turn out onto a wire rack. Cool completely before glazing.
  9. Make the maple glaze: In a small bowl, whisk together powdered sugar, maple syrup, vanilla extract, and salt. Add milk 1 tablespoon at a time until smooth and pourable.
  10. Glaze the donuts: Dip tops of cooled donuts into glaze or drizzle over them. Let excess drip off, then place back on wire rack. Glaze will set in 15-20 minutes.

Notes

Don’t skip reducing the cider—it concentrates the apple flavor. Use room temperature ingredients for best texture. Don’t overmix the batter. Let donuts cool completely before glazing. If donuts stick to pan, grease more generously next time. For muffins instead, bake 15-18 minutes.
