  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1/4 cup (60g) sour cream
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 2 cups (250g) all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (80g) rainbow sprinkles (jimmies)
  • For the optional glaze: 1 cup powdered sugar, 2-3 tablespoons milk or heavy cream, 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar together on medium speed for 2-3 minutes until light, fluffy, and pale. Scrape down the bowl halfway through.
  3. Beat in the egg, sour cream, vanilla extract, and almond extract (if using) on medium speed until fully combined. The mixture may look curdled at first but will come together. Scrape the bowl again.
  4. In a separate medium bowl, whisk together flour, cornstarch, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not over-mix.
  6. Gently fold the rainbow sprinkles into the dough using a rubber spatula. Be careful not to over-stir to prevent color bleeding.
  7. Using a 2-tablespoon cookie scoop, portion the dough and roll into smooth balls. Place on prepared baking sheets, spacing 2 inches apart.
  8. Bake one sheet at a time for 10-12 minutes. Cookies should look puffed and slightly golden around the edges, with soft centers.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. For the optional glaze: whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies and add extra sprinkles if desired.

Notes

Use jimmies (long sprinkles) instead of nonpareils to prevent color bleeding. For thicker cookies, chill the dough balls for 30 minutes before baking. Underbake slightly for the best texture. Store in an airtight container at room temperature for up to 5 days; place a slice of bread in the container to keep cookies soft. Baked cookies can be frozen for up to 3 months.
