A warm, comforting pumpkin chai latte made with oat milk, inspired by coffee shop versions but better. This easy recipe comes together in under 10 minutes with simple ingredients for a cozy fall treat.

  • 2 cups (480 ml) unsweetened oat milk (preferably barista blend)
  • 1 cup (240 ml) strong brewed chai tea (from 2 tea bags or 2 tablespoons loose-leaf)
  • 3 tablespoons (45 g) pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons (30 ml) maple syrup, or to taste
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon (2 g) pumpkin pie spice
  • 1/4 teaspoon (0.5 g) ground cinnamon, plus more for garnish
  • Pinch of salt

Instructions

  1. Brew the chai tea: Steep 2 chai tea bags in 1 cup (240 ml) boiling water for 5-7 minutes. Do not rush this step.
  2. Combine the pumpkin mixture: In a small saucepan, whisk together pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, and salt to form a paste.
  3. Add the oat milk: Pour 2 cups (480 ml) oat milk into the saucepan with the pumpkin mixture. Whisk continuously until fully incorporated.
  4. Heat gently: Warm the mixture over medium-low heat for 3-4 minutes, whisking occasionally, until steaming but not boiling. Do not let it boil.
  5. Add the chai: Pour the brewed chai tea into the saucepan and whisk to combine. Taste and adjust sweetness if needed.
  6. Froth the milk (optional): If using a frother, froth about 1/4 cup (60 ml) of the mixture separately for 15-20 seconds, then stir back in. Alternatively, whisk the whole mixture vigorously for 30 seconds.
  7. Pour and garnish: Pour into your favorite mug. Sprinkle with cinnamon or pumpkin pie spice. Add a cinnamon stick or whipped coconut cream if desired.

Notes

Do not boil oat milk as it can separate and become slimy. Blend pumpkin into a paste with spices first to avoid lumps. Use room temperature oat milk to reduce scorching risk. For a stronger chai flavor, use 3 tea bags. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat gently on the stovetop, not in the microwave.
