This copycat Starbucks pumpkin cream cold foam latte is the result of stubborn testing to recreate that elusive coffee shop version. It’s quick, easy, and uses simple ingredients to deliver a thick, creamy, spiced cold foam that floats on top of iced coffee.

Ingredients

  • 2 tablespoons heavy cream, cold
  • ¼ cup whole milk, cold
  • 1 tablespoon pumpkin puree (100% pure, not pie filling)
  • 1 tablespoon vanilla syrup
  • ½ teaspoon pumpkin pie spice
  • 1 pinch salt
  • 1 cup strong brewed coffee, cooled (or cold brew concentrate)
  • Ice as needed
  • Optional: pumpkin pie spice or cinnamon for garnish

Instructions

  1. Brew 1 cup of strong coffee or cold brew concentrate and let it cool completely.
  2. Fill a 16-ounce glass almost to the top with ice.
  3. Pour the cooled coffee over the ice, leaving about 1 inch of space at the top.
  4. In a small blender cup or jar, combine heavy cream, whole milk, pumpkin puree, vanilla syrup, pumpkin pie spice, and a pinch of salt. Blend on high for 30-45 seconds until thick and frothy.
  5. Slowly pour the cold foam over the back of a spoon onto the iced coffee to create a layer on top.
  6. Garnish with a sprinkle of pumpkin pie spice or cinnamon. Insert a straw and serve immediately.

Notes

Use cold ingredients for best foam. Do not over-blend; stop when thick and creamy. Pour foam over the back of a spoon to keep it floating. For dairy-free, use full-fat oat milk and coconut cream. Leftover foam keeps in the fridge for up to 24 hours.
