  • 1 cup whole milk (or 2% or oat milk)
  • 1 pound breakfast sausage (bulk, mild or hot)
  • 2 cups shredded cheddar cheese (sharp cheddar preferred)
  • 1/2 cup diced onion (yellow or white)
  • 1/2 teaspoon salt
  • Pinch of black pepper
  • Optional: 1/4 cup chopped green bell pepper
  • Optional: 1/4 teaspoon garlic powder

Instructions

  1. Brown the sausage: Heat a large skillet over medium heat. Add the breakfast sausage and cook, breaking it apart with a spatula, until browned and cooked through (6-8 minutes). Drain excess grease if needed. Set aside to cool slightly.
  2. Cook the onions: In the same skillet, add the diced onion (and bell pepper if using). Sauté for 3-4 minutes until soft and translucent.
  3. Grease the slow cooker: Spray the inside of a 6-quart slow cooker insert generously with cooking spray or rub with butter.
  4. Whisk the eggs: In a medium mixing bowl, crack the 12 eggs and add the milk, salt, and pepper. Whisk vigorously for about 1 minute until uniform and slightly frothy.
  5. Layer the ingredients: Spread the cooked sausage and onions evenly across the bottom of the slow cooker. Pour the whisked egg mixture over the top. Sprinkle the shredded cheddar cheese evenly over everything. Do not stir.
  6. Cook low and slow: Cover the slow cooker with the lid. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The casserole is done when the edges are golden and the center is set but still slightly jiggly. A knife inserted in the center should come out clean.
