  • 1 cup breadcrumbs (plain or Italian)
  • ½ cup milk (whole or 2%)
  • 2 large eggs, lightly beaten
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • ¼ cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • ½ cup packed brown sugar
  • ½ cup ketchup (for glaze)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce (for glaze)
  • ½ teaspoon garlic powder

Instructions

  1. Line a 6-quart slow cooker with a large piece of aluminum foil, leaving overhang on two sides to create handles. Lightly spray the foil with non-stick cooking spray.
  2. In a small bowl, whisk together ½ cup packed brown sugar, ½ cup ketchup, 1 tablespoon apple cider vinegar, 1 teaspoon Worcestershire sauce, and ½ teaspoon garlic powder. Set aside.
  3. In a large mixing bowl, combine 1 cup breadcrumbs, 1 teaspoon salt, ½ teaspoon black pepper, and 1 teaspoon dried thyme. Stir to distribute evenly.
  4. Add ½ cup milk, 2 beaten eggs, ¼ cup ketchup, 2 tablespoons Worcestershire sauce, 1 tablespoon Dijon mustard, diced onion, and minced garlic. Stir until it forms a thick, pasty mixture.
  5. Crumble 2 pounds ground beef over the breadcrumb mixture. Use your hands to gently mix until just combined, about 30 seconds. Do not overmix.
  6. Transfer the meat mixture to the center of the foil-lined slow cooker. Shape into a loaf about 8 inches long and 4 inches wide, ensuring it does not touch the sides of the crockpot.
  7. Spoon about half of the brown sugar glaze over the top of the meatloaf and spread evenly.
  8. Cover and cook on LOW for 4 to 5 hours, until the internal temperature reaches 160°F.
  9. About 30 minutes before serving, carefully open the slow cooker and spoon the remaining glaze over the top. Cover and continue cooking for the final 30 minutes.
  10. Using the foil handles, lift the meatloaf out of the slow cooker and transfer to a cutting board. Let rest for 10 minutes before slicing.
  11. Slice into 1-inch thick pieces and spoon any extra glaze from the foil over the slices before serving.

Notes

For a gluten-free version, use gluten-free breadcrumbs. For a dairy-free version, substitute milk with unsweetened almond or oat milk. Double the glaze if you love extra. Let the meatloaf rest for 10 minutes before slicing to keep it moist.
