A warm and inviting sangria that tastes like fall, featuring cinnamon-spiced apples, crisp red wine, and a hint of brandy. Perfect for cozy gatherings or quiet nights in.

Ingredients

Scale
  • 2 medium apples (Honeycrisp, Fuji, or Gala), cored and diced into ½-inch pieces
  • ¼ cup water
  • 2 tablespoons maple syrup
  • 2 cinnamon sticks
  • ¼ teaspoon ground nutmeg
  • 1 bottle dry red wine (750 ml), such as Merlot, Zinfandel, or Tempranillo
  • ½ cup brandy or apple brandy
  • ¼ cup orange liqueur like Triple Sec or Cointreau (optional)
  • 1 cup apple cider (unfiltered preferred)
  • 1 medium orange, thinly sliced into rounds
  • 1 medium lemon, thinly sliced into rounds
  • 2–3 tablespoons maple syrup or honey, to taste
  • 1 cup sparkling water or ginger ale, for serving

Instructions

  1. In a small saucepan, combine diced apples, water, maple syrup, cinnamon sticks, and nutmeg. Bring to a gentle simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until apples are slightly softened but still hold their shape. Remove from heat and let cool completely.
  2. In a large pitcher, pour red wine, brandy, orange liqueur (if using), and apple cider. Stir gently to combine.
  3. Add orange slices and lemon slices to the pitcher. Once cinnamon apples have cooled, add them along with the cinnamon sticks and any remaining syrup from the saucepan. Stir gently.
  4. Add 2 tablespoons of maple syrup or honey and stir. Taste and adjust sweetness, adding more maple syrup one tablespoon at a time if needed.
  5. Cover the pitcher and refrigerate for at least 2 hours, ideally 4-6 hours or overnight.
  6. When ready to serve, fill glasses with ice. Give the sangria a gentle stir, then pour over ice, filling each glass about three-quarters full. Top with a splash of sparkling water or ginger ale. Garnish with a fresh cinnamon stick or apple slice if desired. Serve immediately.

Notes

Don’t skip simmering the apples—it transforms them. Use a wine you’d actually drink (around $10-15). Let the sangria chill for at least 2 hours for best flavor. Add sparkling water to each glass individually to keep it fizzy. The sangria (without sparkling water) keeps in the fridge for up to 3 days.
