  • 3 large shallots, thinly sliced into rings
  • 1/2 cup slivered almonds (raw)
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 1 teaspoon fine sea salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 2 cloves garlic, minced

Instructions

  1. Prep the green beans: Wash and trim the stem ends. Pat dry and set aside.
  2. Slice the shallots: Peel and slice into thin rings (about 1/8-inch thick). Separate rings and place in a medium bowl.
  3. Coat the shallots: Add flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper to the bowl. Toss with hands until each ring is lightly coated. Shake off excess flour.
  4. Blanch the green beans: Bring a large pot of salted water to a rolling boil. Add green beans and cook for 2-3 minutes until bright green and tender-crisp.
  5. Ice bath the beans: Transfer blanched beans to a bowl of ice water. Let sit for 2 minutes, then drain and pat dry.
  6. Fry the shallots: Heat olive oil in a large skillet over medium heat. Add floured shallot rings in a single layer (work in batches if needed). Cook for 3-4 minutes, stirring occasionally, until golden brown and crispy. Transfer to a paper towel-lined plate and sprinkle with a pinch of salt.
  7. Toast the almonds: Wipe out the skillet. Add 1 tablespoon butter over medium heat. Once melted and foamy, add slivered almonds. Stir constantly for 2-3 minutes until golden and fragrant. Transfer to a small bowl.
  8. Sauté the green beans: In the same skillet, add remaining 2 tablespoons butter and minced garlic. Cook for 30 seconds until fragrant. Add blanched green beans, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper. Sauté for 3-4 minutes, tossing occasionally, until heated through.
  9. Finish and serve: Remove from heat. Squeeze lemon juice over beans and toss. Transfer to a serving platter. Top with toasted almonds and crispy shallots. Serve immediately.
