Cozy Kielbasa and White Bean Soup: Easy One-Pot Recipe

A quick and easy one-pot soup with smoked kielbasa, creamy white beans, and a bright lemon finish. Perfect for cozy nights and ready in about 35 minutes.

  • 12–14 ounces smoked kielbasa, sliced into half-moons
  • 2 cans (15 ounces each) white beans (cannellini or great northern), drained and rinsed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients first. Dice the onion, carrots, and celery into roughly equal-sized pieces. Mince the garlic. Slice the kielbasa into half-moons about 1/4-inch thick. Drain and rinse the white beans.
  2. Heat the olive oil in a Dutch oven or large pot over medium heat. Add the sliced kielbasa and cook for 4 to 5 minutes, stirring occasionally, until browned on both sides. Transfer the kielbasa to a plate and set aside.
  3. Add the onion, carrots, and celery to the pot with the rendered fat. Cook over medium heat for 6 to 7 minutes, stirring occasionally, until softened and the onion is translucent.
  4. Stir in the minced garlic, dried thyme, and smoked paprika. Cook for 1 minute, stirring constantly, until fragrant.
  5. Pour in the chicken broth and add the bay leaf. Scrape up any browned bits from the bottom of the pot. Bring to a gentle boil, then reduce heat to low and simmer for 10 minutes.
  6. Add the drained white beans and the browned kielbasa back to the pot. Stir and simmer for another 5 minutes.
  7. Using a potato masher or the back of a fork, mash about half of the beans right in the pot. Stir well to thicken the broth.
  8. Remove the bay leaf and discard. Stir in the fresh lemon juice. Season with salt and black pepper to taste.
  9. Ladle into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread.

Notes

Don’t skip the lemon juice—it brightens the soup. For a thicker soup, let it simmer uncovered a few extra minutes. For a thinner soup, add more broth. The soup thickens as it sits; add a splash of broth when reheating.
