  • 8 oz cream cheese, softened to room temperature
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon flaky sea salt (or a pinch)
  • 12 oz chocolate melting wafers or candy melts (e.g., Ghirardelli dark chocolate)
  • Optional toppings: sprinkles, crushed Oreo crumbs, orange jimmies, white chocolate drizzle

Instructions

  1. Crush the Oreos: Place the entire package of Oreos (cream filling and all) into a food processor. Pulse 10-15 times until you have fine crumbs with a few slightly larger pieces. Set aside about 2 tablespoons of crumbs for garnish.
  2. Soften the cream cheese: Take the cream cheese out of the fridge at least 1 hour before starting to let it come to room temperature. If short on time, microwave in 10-second bursts until soft but not hot.
  3. Mix the filling: In a large mixing bowl, beat the softened cream cheese with the vanilla extract and salt until completely smooth. Add the Oreo crumbs and mix until fully combined. The mixture should look like a thick, dark dough that holds together when squeezed. If too dry, add a teaspoon of milk; if too wet, add more crushed Oreos.
  4. Chill the mixture: Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up.
  5. Roll the truffles: Line a baking sheet with parchment paper. Using a small cookie scoop or tablespoon, portion out the mixture and roll into smooth, even balls (about 24 truffles). Place on the prepared sheet. If hands get sticky, lightly dampen them with water. Refrigerate for another 15-20 minutes.
  6. Melt the chocolate: Place chocolate melting wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until completely smooth and glossy. If too thick, add a teaspoon of coconut oil or vegetable shortening.
  7. Dip the truffles: Working one at a time, drop a truffle into the melted chocolate. Use a fork to roll it until fully coated. Lift out with the fork, letting excess chocolate drip off. Transfer back to the parchment-lined sheet. Before the chocolate sets, sprinkle with reserved Oreo crumbs or Halloween sprinkles. Repeat with all truffles.
  8. Set the chocolate: Place the baking sheet in the refrigerator for at least 30 minutes until the chocolate is firm and snappy.

Notes

For best results, use full-fat cream cheese and regular Oreos (not Double Stuf). Let the rolled truffles sit at room temperature for 5 minutes before dipping to prevent chocolate from cracking. If chocolate seizes, add a tablespoon of warm water and stir vigorously, or start over with fresh chocolate. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
