Cozy One-Bowl Pumpkin Chocolate Chip Cookies (No Mixer!)

Soft, cake-like pumpkin chocolate chip cookies made in one bowl without a mixer. Perfect for cozy autumn evenings, these cookies are filled with warm spices and melty chocolate chips.

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (170g) pumpkin puree, patted dry
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Melt the butter in a small microwave-safe bowl in 20-second intervals until just melted. Set aside to cool for a couple of minutes.
  3. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly combined.
  4. Make a well in the center of the dry ingredients. Pour in the melted butter, brown sugar, granulated sugar, egg, and vanilla extract. Stir with a wooden spoon or spatula until just combined.
  5. Fold in the pumpkin puree until the dough is uniform and slightly sticky.
  6. Fold in the chocolate chips until evenly distributed. Reserve a few chips to press onto the tops of the cookies before baking if desired.
  7. Using a cookie scoop or two spoons, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and the tops look slightly puffed and golden. The centers will still look soft.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Pat the pumpkin puree dry with a paper towel to remove excess moisture—this prevents flat cookies. For best results, use room temperature ingredients and do not overmix the dough. Chilling the dough for 30 minutes helps prevent spreading and enhances flavor.
