  • 2 large boneless, skinless chicken breasts (or thighs for more flavor)
  • 1 cup wild rice or wild rice blend
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream or half-and-half (or coconut cream for dairy-free)
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • ½ teaspoon freshly ground black pepper
  • Salt to taste
  • ¼ cup all-purpose flour (or cornstarch as gluten-free thickener)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Dice carrots, celery, and onion. Mince garlic (about 10 minutes prep).
  2. In a skillet, melt butter over medium heat. Sauté onions, celery, and carrots until softened (5-7 minutes). Add garlic and cook 1-2 more minutes.
  3. Transfer sautéed vegetables to slow cooker. Place chicken breasts on top. Pour in chicken broth. Add thyme and black pepper. Stir gently.
  4. Cook on low for 4-5 hours or high for 2-3 hours.
  5. After about 2 hours on low (or 1 hour on high), add wild rice to slow cooker and stir gently.
  6. When chicken reaches 165°F (74°C), remove and shred with forks. Return shredded chicken to slow cooker.
  7. Whisk flour with heavy cream until smooth. Slowly stir into slow cooker. Cook on low for an additional 20-30 minutes, stirring occasionally to thicken.
  8. Taste and adjust salt and pepper. Garnish with fresh parsley. Serve warm.

Notes

Add wild rice after 2 hours of cooking to prevent mushiness. Sautéing vegetables first enhances flavor. Whisk flour and cream thoroughly to avoid lumps. Avoid boiling after adding cream to prevent curdling. Thin soup with broth or water if too thick; cook uncovered to thicken if too thin. For dairy-free, substitute heavy cream with coconut cream and butter with olive oil or vegan spread. For gluten-free, use cornstarch instead of flour.
