  • 1 large egg yolk
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup plus 2 tablespoons (80g) all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (90g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and sugars together in a medium mixing bowl. Beat the softened butter, brown sugar, and granulated sugar for about 2 minutes until light and fluffy.
  3. Add the egg yolk and vanilla to the butter mixture. Beat until just combined—about 30 seconds. Scrape down the sides of the bowl with your spatula.
  4. Whisk the dry ingredients together in a separate small bowl: flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture. Mix on low speed (or stir gently by hand) until just combined. Stop as soon as you don’t see any more white flour streaks.
  6. Fold in the chocolate chips with your rubber spatula until evenly distributed.
  7. Scoop the dough onto the prepared baking sheet. Use a cookie scoop or tablespoon to portion out 6 to 8 equal-sized balls, spaced about 2 inches apart. Optionally, press a few extra chocolate chips into the tops.
  8. Optional but recommended: Chill the dough for 15 minutes.
  9. Bake for 10 to 12 minutes, or until the edges are golden brown and the centers still look slightly soft and underdone.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
