  • 3 large ripe avocados
  • 1/2 medium red onion, finely diced (about 1/4 cup)
  • 1 jalapeño, seeded and finely minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice (from about 1 lime)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 can (6 oz) large black olives, drained
  • 1/2 cup pitted kalamata olives
  • Tortilla chips, for serving
  • Optional: Sliced bell peppers or cucumber rounds for a lower-carb option

Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a large mixing bowl. Add the lime juice and salt immediately. Mash the avocado to your desired consistency (chunky is recommended).
  2. Add the finely diced red onion, minced jalapeño, chopped cilantro, black pepper, and garlic powder to the bowl. Gently fold everything together until well combined. Taste and adjust salt or lime juice if needed.
  3. For the olive spiders: Slice the large black olives in half lengthwise. Each half will become the body of a spider. Slice the pitted kalamata olives into thin strips (about 4-5 strips per half-olive body) to create the legs.
  4. Place one half of a black olive on top of the guacamole. Arrange 4-5 kalamata olive strips on each side of the body to create the legs. Gently press the ends of the legs into the guacamole to keep them in place. Repeat to make 6-8 spiders.
  5. Serve immediately with tortilla chips. If making ahead, prepare the guacamole base and press plastic wrap directly onto the surface. Assemble the spiders just before serving.

For best results, use ripe avocados that yield to gentle pressure. If making ahead, store guacamole base with plastic wrap pressed directly onto the surface to prevent browning. Assemble spiders just before serving to keep olives from getting soggy. For a spicier version, leave seeds in the jalapeño or add cayenne pepper.
