  • 1.5 pounds boneless, skinless chicken breasts (about 3 medium)
  • 1 cup long-grain white rice (jasmine or basmati recommended)
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 ounces cream cheese, softened and cubed
  • 1 cup shredded cheddar cheese
  • 1 cup frozen peas and carrots
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, and cube the cream cheese. Measure out the rice and seasonings.
  2. Spray the crockpot insert with nonstick cooking spray or rub with butter. Spread the diced onion and minced garlic across the bottom.
  3. Place the chicken breasts in a single layer over the onions. Season with salt, pepper, dried thyme, garlic powder, and onion powder.
  4. Pour the chicken broth around the chicken (not directly on top). Spoon the cream of chicken soup over the chicken and spread gently.
  5. Cover and cook on low for 3 hours. The chicken should be cooked through and tender.
  6. Shred the chicken using two forks, either on a cutting board or directly in the pot.
  7. Stir in the uncooked rice, making sure it is submerged in the liquid. If the liquid looks low, add an extra 1/4 cup of broth or water.
  8. Cover and cook on low for another 1.5 to 2 hours, until the rice is tender and has absorbed most of the liquid.
  9. Stir in the cubed cream cheese until melted, then add the shredded cheddar. Stir until smooth and creamy.
  10. Fold in the frozen peas and carrots. Let sit covered for 5 minutes to warm through.
  11. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired. If too thick, stir in a splash of warm broth or milk.

Notes

For best results, use full-fat cream cheese and add dairy at the end to prevent curdling. Let the dish rest for 5-10 minutes before serving to allow flavors to meld. Leftovers can be stored in the refrigerator for up to 4 days and taste even better the next day.
