This creamy crockpot white chicken chili is a comforting, flavorful, and easy weeknight dinner that comes together in under 15 minutes of active prep. The slow cooker does all the work, resulting in tender chicken and a naturally creamy broth without heavy cream.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 (15-ounce) cans white beans (Great Northern, cannellini, or navy), drained and rinsed
  • 1 (4-ounce) can diced green chiles
  • 2 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 34 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 ounces Neufchâtel cheese, softened
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped (plus more for garnish)
  • Optional toppings: shredded Monterey Jack cheese, diced avocado, tortilla chips, sour cream or Greek yogurt, pickled jalapeños

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the beans, open the green chiles, and measure out the spices and broth.
  2. Layer the chili base in the crockpot: place the chicken breasts in the bottom, sprinkle with onion and garlic, add the beans, green chiles, cumin, oregano, chili powder, salt, and pepper. Pour the chicken broth around the sides.
  3. Cook on low for 6-7 hours or high for 3-4 hours, until the chicken shreds easily.
  4. Remove the chicken and shred it with two forks. Return the shredded chicken to the crockpot.
  5. Scoop out about 1 cup of the cooked beans and a little broth, mash with a fork until mostly smooth, then stir back into the chili.
  6. Cut the softened Neufchâtel cheese into small cubes and stir into the hot chili. Let it melt for 5 minutes, then stir until fully incorporated.
  7. Stir in the fresh lime juice and chopped cilantro. Taste and adjust seasoning.
  8. Serve immediately with desired toppings.

Notes

For extra flavor, sear the chicken breasts in a hot skillet with oil before adding to the crockpot. Let the cream cheese come to room temperature to avoid clumping. If the chili is too thick, add a splash of warm broth; if too thin, cook uncovered on high for 15-20 minutes.
