Creamy One-Pan Tuscan Sun-Dried Tomato Salmon Pasta

A quick and easy one-pan pasta dish featuring creamy sauce, sun-dried tomatoes, and tender salmon, perfect for cozy dinners and busy weeknights.

  • 1 lb (450 g) skinless, boneless salmon fillets, fresh or thawed
  • 8 oz (225 g) dry penne or rigatoni pasta
  • 1/3 cup (50 g) chopped sun-dried tomatoes, packed in oil, drained slightly
  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 2 cups fresh spinach, loosely packed (can substitute baby kale)
  • 3 cups (720 ml) chicken or vegetable broth, low-sodium preferred
  • 1/2 cup (120 ml) heavy cream or half-and-half (can swap with coconut cream for dairy-free)
  • 1/2 cup (50 g) grated Parmesan cheese
  • 2 tbsp olive oil (extra virgin recommended)
  • 1 tsp Italian seasoning (or mix of dried basil, oregano, and thyme)
  • Pinch of red pepper flakes (optional)
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Pat salmon dry with paper towels and season lightly with salt and pepper. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped shallot; cook until fragrant and softened, about 2-3 minutes, stirring frequently to avoid burning.
  3. Push aromatics to the side and place salmon fillets skin-side down if skin-on. Cook 3-4 minutes per side until just opaque but not fully cooked through. Remove salmon and set aside.
  4. Add chopped sun-dried tomatoes and Italian seasoning to the skillet. Stir to combine with garlic and shallots and cook for 1 minute.
  5. Pour in broth and add dry pasta. Stir to separate pasta and bring to a gentle boil. Cover with lid, reduce heat to medium-low, and simmer, stirring occasionally, until pasta is tender and most liquid is absorbed, about 12-15 minutes.
  6. Stir in heavy cream and grated Parmesan cheese. Add fresh spinach and stir until wilted and sauce is creamy, about 2-3 minutes.
  7. Nestle cooked salmon back into the pasta, spoon sauce over the top, and let sit on low heat for 2 minutes to warm through and combine flavors.
  8. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.
  9. Serve hot, garnished with extra Parmesan or fresh basil if desired.

Notes

If the sauce becomes too thick during cooking or reheating, add a splash of broth or water to loosen it. Avoid overcooking salmon as it continues cooking off heat. Stir pasta gently to prevent breaking. Use fresh salmon for best results. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
