  • 1.5 lbs (680g) boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup (60g) sun-dried tomatoes, drained and chopped
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) low-sodium chicken broth
  • 3 cups (90g) fresh baby spinach
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, black pepper, and 1/2 teaspoon of Italian seasoning.
  2. Heat olive oil in a large pot over medium-high heat. Sear the chicken thighs for 4-5 minutes per side until golden brown. Transfer to a plate and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes. Stir for about 1 minute until fragrant, scraping up any browned bits from the bottom.
  4. Pour in chicken broth and deglaze the pan. Let simmer for 1 minute. Slowly pour in heavy cream while stirring. Add remaining 1/2 teaspoon Italian seasoning and red pepper flakes if using. Stir until smooth.
  5. Return the seared chicken to the pot, nestling into the sauce. Bring to a gentle simmer, then reduce heat to low. Cover and cook for 12-15 minutes until chicken is tender.
  6. Uncover and stir in fresh spinach until wilted, about 1-2 minutes. Sprinkle in Parmesan cheese and stir until melted and sauce is creamy.
  7. Remove from heat and let rest for 5 minutes. Taste and adjust seasoning. Serve immediately over pasta, rice, or with crusty bread.

Notes

For best results, don’t skip searing the chicken. Keep heat at medium-low when adding cream to prevent curdling. Use room temperature ingredients. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
