A quick and easy creamy chicken recipe cooked in one skillet with sun-dried tomatoes and a rich parmesan cream sauce, perfect for easy weeknight dinners.

  • 1 to 1.5 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter, divided
  • 3 to 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 1 cup (240 ml) low sodium chicken broth
  • 3/4 cup (180 ml) heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • Handful of fresh basil or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon butter. Once butter melts and foams, add chicken breasts.
  3. Sear chicken for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken and set aside.
  4. Lower heat to medium and add remaining 1 tablespoon butter. Add minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
  5. Pour in chicken broth to deglaze the pan, scraping up brown bits. Simmer for 2-3 minutes to concentrate flavors.
  6. Stir in heavy cream and parmesan cheese. Reduce heat to low and stir gently until cheese melts and sauce thickens slightly, about 3-4 minutes.
  7. Return chicken breasts to skillet, spoon sauce over them, and simmer gently for 3-5 minutes to meld flavors and finish cooking if needed.
  8. Sprinkle chopped fresh basil or parsley over the top before serving.

Notes

Pat chicken dry before searing for a good crust. Keep garlic heat moderate to avoid bitterness. Stir parmesan gently off or on low heat to prevent clumping. Let chicken rest a few minutes after cooking to keep it juicy. Adjust sauce thickness by adding broth or cream as needed. Use tongs to flip chicken in sauce for even coating.
