  • 1/2 cup mixed berries (fresh or frozen)

Instructions

  1. Make the berry compote layer first. In a small bowl, combine 1/2 cup mixed berries, 1 tablespoon chia seeds, and 1 teaspoon lemon juice if using. Mash the berries gently with a fork until they release their juices. Let sit for about 5 minutes.
  2. Mix the oat base. In a separate medium bowl, combine rolled oats, milk, Greek yogurt, 2 tablespoons chia seeds, maple syrup or honey, vanilla extract, and a pinch of salt. Whisk until well combined, about 30 seconds.
  3. Layer it up. In jars or containers, start with a layer of the oat base filling each about halfway. Add a layer of the berry compote, then top with the remaining oat base.
  4. Seal and refrigerate. Put lids on jars and refrigerate for at least 6 hours, preferably overnight.
  5. In the morning, stir if desired to distribute the berry compote throughout.
  6. Add toppings such as fresh berries, nut butter, granola, or Greek yogurt. Serve cold straight from the fridge or let sit at room temperature for 10 minutes.

Notes

Use old-fashioned rolled oats for best texture. Don’t skip the salt—it enhances flavors. Let chia seeds bloom for at least 6 hours. Make a big batch for up to 5 days of breakfasts. Add toppings just before serving to avoid sogginess. If oats are too thick in the morning, stir in a splash of milk.
