  • 1 cup (240ml) milk (any kind)
  • 1/4 cup (65g) creamy peanut butter
  • 1 large ripe banana (about 120g mashed)
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (15g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, chopped peanuts or walnuts, dark chocolate chips, cinnamon

Instructions

  1. Mash the banana in a mixing bowl until mostly smooth with a few tiny lumps.
  2. Add peanut butter, milk, maple syrup (or honey), vanilla extract, and a pinch of salt. Whisk until smooth and well combined.
  3. Stir in rolled oats and chia seeds (if using) until all oats are coated. The mixture will be liquidy.
  4. Divide the mixture evenly into two 16-ounce mason jars or one large airtight container.
  5. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with desired toppings and serve cold or at room temperature.

Mash the banana thoroughly for even flavor distribution. Taste the wet mixture before adding oats and adjust sweetness/salt. Use rolled oats, not instant or steel-cut.
