  • 2 lbs ripe tomatoes, halved (Roma or vine-ripened)
  • 3 tbsp olive oil
  • 1 medium onion, roughly chopped
  • 3 garlic cloves, smashed
  • 1 cup vegetable or chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup fresh basil leaves, roughly chopped
  • Salt and freshly ground black pepper, to taste
  • 1 tsp sugar (optional)
  • 4 slices crusty bread (sourdough or country loaf recommended)
  • 6 oz Gruyère cheese, grated (Swiss cheese as substitute)
  • 2 tbsp unsalted butter, softened

Instructions

  1. Preheat oven to 400°F (200°C). Place halved tomatoes and smashed garlic cloves on a roasting pan. Drizzle with 3 tablespoons olive oil and sprinkle a pinch of salt. Toss gently to coat evenly. Roast for 30-35 minutes until tomatoes are soft, caramelized, and slightly charred at the edges.
  2. While tomatoes roast, heat a tablespoon of olive oil in a large pot over medium heat. Add chopped onion and cook until translucent and soft, about 5-7 minutes, stirring occasionally.
  3. Add roasted tomatoes and garlic to the pot with onions. Pour in 1 cup broth. Let simmer for about 10 minutes to meld flavors.
  4. Using an immersion blender, puree the mixture directly in the pot until smooth. If using a countertop blender, blend in batches carefully.
  5. Stir in 1/2 cup heavy cream and chopped fresh basil. Simmer gently for 5 more minutes. Season with salt, pepper, and optional sugar to balance acidity.
  6. Butter one side of each bread slice. Heat a skillet over medium heat. Place bread, butter side down, in pan and sprinkle grated Gruyère evenly on top. Top with another bread slice, butter side up. Grill until golden brown and cheese melts, about 3-4 minutes per side. Let cool slightly, then cut into bite-sized croutons.
  7. Ladle soup into bowls and scatter grilled cheese croutons on top. Garnish with fresh basil leaves if desired.

Notes

Roasting tomatoes and garlic intensifies flavor. Use fresh basil for best taste. For dairy-free, substitute cream with coconut milk and Gruyère with vegan cheese. Make grilled cheese croutons last to keep them crisp. Reheat soup gently with added broth if too thick.
