  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 3 cups chopped kale, stems removed
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Brown the sausage (5-7 minutes): Heat olive oil in a Dutch oven over medium-high heat. Add sausage, breaking it up with a wooden spoon. Cook until browned. Transfer sausage to a plate with a slotted spoon; leave drippings in pot.
  2. Sauté the aromatics (3-4 minutes): Reduce heat to medium. Add diced onion and cook until soft and translucent, about 3 minutes, scraping up browned bits. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add the broth and potatoes (15-18 minutes): Pour in chicken broth, then add diced potatoes, salt, black pepper, smoked paprika, and red pepper flakes. Stir, scraping up any remaining browned bits. Bring to a boil, then reduce to a simmer. Cover and cook until potatoes are tender, 15-18 minutes.
  4. Mash some potatoes (2 minutes): Use a potato masher or fork to mash about one-third of the potatoes right in the pot. Leave some chunks for texture.
  5. Add the cream and kale (5 minutes): Reduce heat to low. Stir in heavy cream and chopped kale. Let kale wilt, stirring occasionally, for 3-5 minutes. If using Parmesan, stir it in now until melted.
  6. Return the sausage and finish (2 minutes): Add cooked sausage back to the pot. Stir and let warm through for 1-2 minutes. Taste and adjust seasoning as needed.
  7. Serve immediately: Ladle soup into bowls and enjoy hot. Soup will thicken as it sits; add a splash of broth or water when reheating if needed.

For best flavor, brown the sausage well. Keep potato pieces uniform for even cooking. Add cream over low heat to prevent curdling. Soup thickens as it sits; add extra broth when reheating. Leftovers keep in the refrigerator for up to 4 days. Freeze without kale for up to 3 months.
