  • 1 pound Italian sausage (sweet or mild)
  • 2 cans (15 oz each) white beans (cannellini or navy), drained and rinsed
  • 4 cups vegetable or chicken broth, low sodium if possible
  • 4 cloves garlic, minced
  • 1 medium yellow onion, finely chopped
  • 3 cups kale, chopped and stems removed (fresh or frozen)
  • ½ cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 1 large bay leaf
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add Italian sausage, breaking it into small pieces with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Transfer to the slow cooker, leaving browned bits in the pan.
  2. In the same skillet, add chopped onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant. Transfer to the slow cooker.
  3. Drain and rinse white beans and add them to the slow cooker. Pour in broth and stir gently.
  4. Stir in dried Italian herbs, chopped sun-dried tomatoes, and bay leaf. Season lightly with salt and pepper.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours until soup thickens and flavors meld.
  6. About 30 minutes before serving, stir in chopped kale. It will soften but retain some texture.
  7. Mash about 1 cup of the beans against the side of the slow cooker with a spoon and stir to create a creamy texture.
  8. Remove bay leaf, taste, and adjust seasoning with salt and pepper. Sprinkle with freshly grated Parmesan cheese before serving if desired.

Notes

Brown the sausage first to add depth and prevent greasiness. Mash some beans in the slow cooker to achieve creaminess without cream. Add kale near the end to keep texture. Use low sodium broth and rinse canned beans to control saltiness. For stovetop cooking, simmer gently for 1.5 to 2 hours.
