  • 1 cup panko breadcrumbs

  • 1 cup shredded carrots

  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • 12 slider buns, toasted
  • Optional: sliced pickles or celery sticks

Instructions

  1. Slice chicken breasts into slider-sized pieces (about 3 inches wide) and pat dry with paper towels.
  2. Prepare breading stations: mix flour, paprika, garlic powder, salt, and pepper in one bowl; beat eggs in another; place panko breadcrumbs in a third bowl.
  3. Dredge each chicken piece in flour mixture, then dip in eggs, coat with panko breadcrumbs. Repeat egg and panko coating for extra crunch.
  4. Heat about ½ inch of vegetable oil in a skillet over medium-high heat until it reaches 350°F (175°C).
  5. Fry chicken pieces for 4-5 minutes per side until golden brown and cooked through (internal temp 165°F/74°C). Drain on paper towels.
  6. While frying, whisk together hot sauce, melted butter, and honey to make buffalo sauce.
  7. Toss fried chicken in buffalo sauce to coat evenly but not drown.
  8. Prepare blue cheese slaw by mixing shredded cabbage and carrots. In another bowl, whisk mayonnaise, sour cream, apple cider vinegar, Dijon mustard, salt, and pepper. Pour dressing over veggies, fold in blue cheese, and toss lightly.
  9. Toast slider buns until slightly crispy but still soft inside.
  10. Assemble sliders by layering buffalo chicken on bottom bun, topping with blue cheese slaw, adding pickles or celery sticks if desired, and placing top bun.

Keep oil temperature steady at 350°F to avoid burning or soggy coating. Double dredge chicken for extra crunch. Fry in batches to avoid overcrowding. Pat chicken dry before breading. Mix blue cheese slaw dressing just before serving to keep it fresh. For gluten-free, use almond flour and gluten-free panko. For dairy-free, substitute or omit blue cheese.
