  • 1 cup finely grated Parmesan cheese (preferably Parmigiano-Reggiano)
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the grated Parmesan, panko breadcrumbs, garlic powder, smoked paprika, dried oregano, salt, and pepper. Stir until well mixed.
  3. Lightly brush the chicken drumsticks with olive oil to help the coating stick and crisp up.
  4. Roll each oiled drumstick in the Parmesan breadcrumb mixture, pressing gently to adhere the coating without flattening it. Place coated drumsticks on a wire rack set over a rimmed baking sheet.
  5. Bake in the preheated oven for 35-40 minutes, turning once halfway through, until the drumsticks are golden brown and reach an internal temperature of 165°F (74°C).
  6. Let the drumsticks rest for 5 minutes after baking. Serve warm with lemon wedges.

Notes

If you don’t have a wire rack, line the baking sheet with parchment paper and flip the drumsticks halfway through baking for even crisping. Use gluten-free breadcrumbs and dairy-free Parmesan alternatives for gluten-free or lactose-free versions. Keep an eye on the drumsticks during the last 10 minutes to avoid burning and rotate the baking sheet if needed.
