  • 1 cup fresh or frozen corn kernels (if using frozen, thaw and drain)
  • 1/2 cup all-purpose flour (or almond flour for gluten-free option)
  • 2 large eggs, beaten (room temperature)
  • 1/4 cup grated Parmesan cheese (optional but recommended)
  • 2 green onions, thinly sliced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil or avocado oil for frying
  • For the chipotle lime crema:
  • 1/2 cup sour cream or Greek yogurt (use dairy-free yogurt for vegan alternative)
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 teaspoon lime zest
  • 1/2 teaspoon honey or maple syrup
  • Pinch of salt

Instructions

  1. Grate 2 medium zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much moisture as possible (about 5-7 minutes).
  2. In a large bowl, combine the squeezed zucchini, 1 cup corn kernels, 1/2 cup flour, 2 beaten eggs, 1/4 cup grated Parmesan, sliced green onions, 1/2 teaspoon smoked paprika, salt, and pepper. Stir until evenly incorporated. If too wet, add a tablespoon more flour (5 minutes).
  3. In a small bowl, mix 1/2 cup sour cream or Greek yogurt with the minced chipotle pepper, 1 tablespoon lime juice, 1 teaspoon lime zest, 1/2 teaspoon honey, and a pinch of salt. Taste and adjust seasoning. Chill until ready to serve (5 minutes).
  4. Heat about 2 tablespoons of oil in a large skillet over medium heat until shimmering but not smoking (3-4 minutes).
  5. Scoop about 2 tablespoons of batter per fritter into the pan, flatten slightly with the back of a spoon. Fry for 3-4 minutes on each side until golden brown and crispy. Work in batches to avoid overcrowding. Drain cooked fritters on paper towels (15-20 minutes).

Notes

Squeeze out as much moisture as possible from zucchini to avoid soggy fritters. Use a flexible spatula to flip fritters gently. Heat oil properly before frying. Keep cooked fritters warm in a low oven (200°F) to maintain crispiness. Batter and crema can be prepared ahead and refrigerated. For vegan version, substitute eggs with flax eggs and use dairy-free yogurt.
