  • 1 (2.5 to 3 lb) boneless, skin-on turkey breast
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves, chopped
  • 1 tablespoon fresh sage, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • ½ cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • Optional: 2 sprigs fresh rosemary and 3 sprigs fresh thyme for garnish

Instructions

  1. In a small bowl, combine the softened butter, chopped rosemary, thyme, sage, minced garlic, salt, and pepper. Mash together with a fork until herbs are evenly distributed. Set aside at room temperature.
  2. Pat the turkey breast dry with paper towels. Gently loosen the skin from the meat to create a pocket, being careful not to tear the skin.
  3. Take about two-thirds of the herb butter and slide it under the skin, spreading evenly over the meat. Rub the remaining butter all over the outside of the skin.
  4. Heat olive oil in a large skillet over medium-high heat. Sear the turkey breast skin-side down for 3-4 minutes until deep golden brown. Flip and sear the other side for 2 minutes.
  5. Pour chicken broth into the bottom of a 6-quart or larger slow cooker. Place the seared turkey breast skin-side up in the crockpot (broth should only come up about a quarter of the way).
  6. Cover and cook on LOW for 3-4 hours, or on HIGH for 1.5-2.5 hours, until internal temperature reaches 155°F to 160°F in the thickest part.
  7. Carefully transfer the turkey to an oven-safe dish. Tent loosely with foil and let rest for 10 minutes. Preheat broiler to high. Remove foil and broil for 2-3 minutes until skin crisps and deepens to golden brown.
  8. Let turkey rest another 5 minutes after broiling. Slice against the grain into ½-inch thick pieces. Spoon some cooking juices from the crockpot over the slices. Arrange on a platter with fresh herb sprigs.

Notes

Don’t overcook; target 155°F to 160°F before resting. Searing is essential for flavor. Let the turkey rest before slicing to retain juices. For skinless turkey, wrap in bacon. Herb butter can be made up to 3 days ahead.
