This crowd-pleasing witches’ brew green punch is the star of any Halloween party, featuring a spooky green color from lime sherbet and dramatic dry ice fog. It’s incredibly easy to make with simple ingredients and creates a magical, memorable centerpiece.

Ingredients

  • 1 liter lemon-lime soda (like Sprite or 7UP), chilled
  • 1 liter ginger ale, chilled
  • 1 quart lime sherbet, slightly softened
  • 1 can (12 ounces) frozen lemonade concentrate, thawed
  • 2 cups pineapple juice, chilled
  • 12 drops green food coloring (optional)
  • 510 pounds food-grade dry ice
  • Ice ring or ice cubes (for serving)

Instructions

  1. Make the ice ring at least 4 hours before serving (or the night before). Fill an ice ring mold halfway with water, arrange lime slices, mint leaves, and optional edible flowers or cranberries in the water. Freeze until solid (about 2 hours), then add more water to fill the mold completely and freeze again.
  2. Chill all liquids 2 hours before serving: lemon-lime soda, ginger ale, pineapple juice, and thawed lemonade concentrate. Keep them very cold.
  3. 10 minutes before serving, combine the base: In a large punch bowl (at least 2-gallon capacity), pour in the chilled lemon-lime soda, ginger ale, pineapple juice, and thawed lemonade concentrate. Stir gently to combine.
  4. 5 minutes before serving, add the sherbet: Scoop the lime sherbet into the punch bowl. Use a large spoon or ladle to break it up slightly, letting it melt naturally to create a creamy green color. Do not stir vigorously.
  5. Right before serving, add the ice ring: Carefully slide the ice ring out of its mold and float it in the punch.
  6. Right before serving, add the dry ice: Wearing insulated gloves or using tongs, break the dry ice into small chunks (about the size of ice cubes). Drop a few pieces into the punch bowl. The dry ice will sink and release thick, white fog. Add more chunks as the fog diminishes.
  7. Serve immediately: Ladle the punch into cups, being careful not to scoop up any dry ice pieces. The dry ice should remain in the punch bowl.

Notes

Dry ice safety is crucial: never touch dry ice with bare skin, never store it in a sealed container, and never let it end up in someone’s cup. The dry ice should stay in the punch bowl. For best fog effect, add dry ice right before serving and refresh every 15-20 minutes. Let sherbet sit at room temperature for 10-15 minutes before adding for easier melting. Do not over-stir the punch.
