This banana bread features nutty browned butter, gooey chocolate chips, and a surprising sprinkle of flaky sea salt for a perfect balance of sweet and salty. It’s quick, easy, and perfect for any occasion.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, browned
  • 3 ripe bananas, mashed
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1 cup (175g) semi-sweet chocolate chips
  • About 1 teaspoon flaky sea salt for sprinkling

Instructions

  1. Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Stir frequently as the butter melts, foams, and turns golden brown with nutty aromas (about 5 minutes). Remove from heat immediately and pour into a heatproof bowl to cool slightly (~5 minutes).
  2. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper.
  3. In a large bowl, mash 3 ripe bananas until smooth but still a bit chunky. Add browned butter, 3/4 cup granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract. Stir until combined.
  4. In another bowl, whisk together 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually fold dry ingredients into wet mixture with a spatula until just combined; do not overmix.
  6. Fold in 1 cup semi-sweet chocolate chips evenly throughout the batter.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Lightly sprinkle about 1 teaspoon flaky sea salt over the top.
  9. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Tent with foil after 40 minutes if top browns too fast.
  10. Let bread cool in pan for 15 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Use a light-colored pan to brown butter to watch color changes. Fold batter gently to avoid toughness. Flaky sea salt on top adds a surprising flavor contrast. Ripe bananas are best; microwave or roast less ripe bananas to soften. Tent with foil if crust browns too fast. Store wrapped tightly to keep moist. Can substitute Greek yogurt for one egg or coconut oil for butter for dairy-free version.
