  • 4 cups (960 ml) chicken broth (low-sodium preferred)
  • 2 medium carrots, peeled and diced
  • ½ cup (60 g) small pasta shapes (tiny elbows or stars)
  • 1 cup (140 g) shredded cooked chicken
  • ¼ cup (60 ml) heavy cream

Instructions

  1. Pour 4 cups (960 ml) of chicken broth into a medium saucepan and bring to a gentle simmer over medium heat (about 5 minutes).
  2. Add the 2 peeled and diced medium carrots and cook for 8-10 minutes until tender but still holding shape.
  3. Add ½ cup (60 g) small pasta shapes directly to the simmering broth and carrots. Stir occasionally and cook for 6-8 minutes until pasta is al dente.
  4. Stir in 1 cup (140 g) shredded cooked chicken and warm through for 2 minutes if chicken is cold.
  5. Turn heat to low and stir in ¼ cup (60 ml) heavy cream gently until soup is creamy and smooth. Avoid boiling after adding cream.
  6. Season lightly with salt and pepper to taste, keeping flavors mild for kids.
  7. Pre-warm the thermos by filling it with hot water for 5 minutes, then empty it. Pour the hot soup into the thermos, seal tightly, and pack in the lunchbox.

Notes

Pre-warm the thermos with boiling water before filling to keep soup hot longer. Avoid overcooking pasta as it will continue to cook in the thermos. Use low-sodium broth to control saltiness. Stir gently after adding cream to prevent curdling. Shred chicken finely for easier eating. Fill thermos tightly to reduce air and maintain heat.
