This creamy, spicy buffalo chicken dip is the ultimate game day snack. Made with simple ingredients and ready in under 20 minutes, it’s always the first bowl to be scraped clean.

  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons chopped fresh parsley (optional)
  • Extra shredded cheddar cheese for topping (optional)
  • Tortilla chips, celery sticks, carrot sticks, or crusty bread for serving

Instructions

  1. Preheat your oven to 375°F (190°C). If using a slow cooker, set it to low heat.
  2. Prepare your chicken: If using rotisserie chicken, remove skin and bones, then shred the meat using two forks. If cooking from scratch, season two boneless, skinless chicken breasts with salt and pepper, bake at 375°F for 20-25 minutes until internal temperature reaches 165°F, then shred.
  3. In a medium skillet over medium heat, add a tiny drizzle of olive oil. Sauté the chopped green onions (reserve a tablespoon for garnish) for about 1 minute until fragrant and slightly softened.
  4. Add the softened cream cheese to the skillet and stir constantly for 2-3 minutes until completely melted and smooth.
  5. Pour in the buffalo wing sauce and ranch dressing. Stir until well combined and the mixture is smooth and slightly thickened, about 1 minute.
  6. Fold in the shredded chicken, garlic powder, and onion powder. Stir until evenly coated. Taste and adjust seasoning with salt and pepper.
  7. Reserve about 1/4 cup of shredded cheddar for topping. Fold in the remaining cheddar and all of the mozzarella cheese until melted and the dip is thick and cohesive.
  8. Transfer the dip to a prepared baking dish or oven-safe skillet. Spread into an even layer. Sprinkle reserved cheddar on top, followed by crumbled blue cheese if using.
  9. Bake for 15-20 minutes until hot and bubbly and the top is lightly golden. For a deeper golden crust, broil for the last 2 minutes, watching closely.
  10. Remove from oven and let cool for 2-3 minutes. Garnish with reserved green onions and fresh parsley. Serve immediately with tortilla chips, celery sticks, or crusty bread.

Notes

For a slow cooker version, combine all ingredients in the slow cooker and cook on low for 2-3 hours, stirring occasionally. To make ahead, assemble without baking and refrigerate up to 24 hours; add 5-10 minutes to baking time. For a milder dip, start with 1/3 cup buffalo sauce. Shred your own cheese for the smoothest texture.
