Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or line it with parchment paper.
  2. Prepare the apple filling: In a medium bowl, toss the sliced apples with 2 tablespoons of sugar, 1 teaspoon of cinnamon, and 1 tablespoon of lemon juice. Let them sit for about 10 minutes.
  3. Make the streusel topping: In a separate bowl, whisk together 1 cup of flour, ½ cup of brown sugar, 1 teaspoon of cinnamon, and ¼ teaspoon of salt. Add the cold butter cubes and use a pastry cutter or your fingertips to work the butter into the flour mixture until it resembles coarse crumbs. Refrigerate while you make the batter.
  4. Cream the butter and sugar: In a large mixing bowl, beat the softened ½ cup of unsalted butter and ¾ cup of granulated sugar together until light and fluffy, about 2-3 minutes.
  5. Add the eggs and vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
