Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 10 minutes until spreadable.
  2. Season the cream cheese with garlic powder, salt, and freshly ground black pepper; mix well.
  3. Lay out two 8-inch flour tortillas flat on a clean surface.
  4. Spread half of the seasoned cream cheese evenly onto each tortilla, leaving about a 1/2 inch border around the edges.
  5. Layer 4–5 slices (about 3 oz) of deli turkey evenly over the cream cheese on each tortilla.
  6. Place about 1/2 cup fresh baby spinach leaves on top of the turkey, removing any large stems.
  7. If using, add optional extras like thin slices of red bell pepper or shredded cheese evenly over the spinach.
  8. Roll each tortilla tightly into a log, tucking the filling in gently to avoid tearing.
  9. Wrap each rolled tortilla tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes.
  10. Remove from fridge, unwrap, and slice each roll into 1-inch thick pinwheel slices using a sharp knife.
