Instructions

  1. Preheat your oven to 425°F (220°C) and position the rack in the center.
  2. Pat the chicken thighs dry with paper towels to remove excess moisture. Season both sides generously with salt, pepper, smoked paprika, and half the minced garlic. Set aside.
  3. In a large mixing bowl, combine zucchini slices, chopped bell peppers, and cherry tomatoes. Drizzle with 2 tablespoons olive oil, sprinkle with salt, pepper, remaining garlic, and fresh herbs. Toss well to coat evenly.
  4. Spread the veggies in an even layer on a large rimmed baking sheet. Nestle the chicken thighs skin-side up among the veggies, ensuring they are not overcrowded to allow air circulation.
