  • 2 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and onion powder. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Sear the pork chops for 3-4 minutes per side until deeply golden brown. Transfer to a plate (they will not be cooked through).
  3. In the same skillet, reduce heat to medium and add butter. Once melted, add sliced onions. Cook for 8-10 minutes, stirring occasionally, until soft and golden, scraping up browned bits from the pan.
  4. Sprinkle flour over the caramelized onions and stir constantly for 1 minute. Slowly pour in beef broth while stirring, then add Worcestershire sauce, dried thyme, and bay leaf. Bring to a simmer and cook for 2-3 minutes until thickened. Remove from heat.
  5. Place seared pork chops in a single layer in a 6-quart slow cooker. Pour the onion gravy mixture over the top, ensuring chops are mostly submerged. Tuck the bay leaf in.
  6. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until pork chops are fork-tender.
  7. Remove bay leaf and let pork chops rest in gravy for 10 minutes. Taste and adjust seasoning if needed. Serve with a generous ladle of gravy over the top.

Notes

For best results, don’t skip searing the pork chops—it creates deep flavor. Bone-in chops are recommended for moisture. If gravy is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into slow cooker; cook on high for 15-20 minutes to thicken. Leftovers keep up to 4 days in the refrigerator or 3 months in the freezer.
