Instructions

  1. Prep the cucumbers: Wash cucumbers, cut off ends, slice in half lengthwise, then cut into 1/4-inch half-moons. Place in a colander over a bowl, sprinkle with 1/2 teaspoon salt, toss, and let sit for 10 minutes to draw out excess water.
  2. Tame the onion: Thinly slice red onion into half-rings, place in a small bowl, cover with cold water, and soak for 5-10 minutes. Drain and pat dry.
  3. Prep the tomatoes: Wash and dry cherry tomatoes, cut each in half (or quarters if large). Place in a mixing bowl.
  4. Make the dressing: In a small bowl or mason jar, combine olive oil, lemon juice, red wine vinegar, remaining 1/2 teaspoon salt, black pepper, and dried oregano (if using). Whisk or shake until emulsified.
  5. Drain the cucumbers: After 10 minutes, gently shake the colander to remove excess water, then pat cucumbers dry with a clean towel. Add to the bowl with tomatoes.
