Instructions

  1. Thaw and drain the corn: If using frozen corn, let it thaw in a colander for about 10 minutes, pressing gently to remove excess moisture.
  2. Combine the creamy base: In a mixing bowl, stir together ½ cup mayonnaise and ½ cup sour cream (or Mexican crema). Add 2 tablespoons fresh lime juice, ½ teaspoon garlic powder, and 1 teaspoon salt. Mix well until smooth and tangy.
  3. Add the seasoning: Sprinkle in 1 ½ teaspoons Tajin seasoning. Taste and adjust if you want it spicier or more tangy.

  5. Incorporate the Cotija cheese: Crumble 1 cup Cotija cheese and fold it into the mixture evenly without mashing.
